Lemon Drizzle Cake

A couple of people requested this recipe so I thought I’d post it here.  It’s from the Weight Watchers Pure Points 2002 Cookbook.

Ingredients

  • Low fat cooking spray
  • 100g (3½ oz) polyunsaturated margarine
  • 100g (3½ oz) caster sugar
  • 2 medium eggs
  • 4 tbsp skimmed milk
  • 1 tsp baking powder
  • grated zest and juice of 2 medium lemons
  • 175g (6 oz) self-raising flour
  • 2 tbsp caster sugar for the topping

Instructions

  1. Preheat the oven to Gas Mark 5/190°C/375°F.  Spray and 18cm (7 inch) round tin with the low-fat cooking spray, line with baking paper and spray again (or use a bun tin and cake cases to make fairy cakes).
  2. Cream together the margarine and sugar until light and fluffy.  Add the eggs one at a time and beat well between each addition.  Add the milk, baking powder and lemon zest and beat well.
  3. Sift the flour into the mixture and fold in lightly.  Spoon into the prepared tin and bake for 30-40 minutes (or 10-12 minutes if fairy cakes) or until golden brown and a skewer inserted into the centre comes out clean.
  4. Meanwhile, to make the topping heat together the sugar and lemon juice until the sugar is dissolved.  When the cake is cooked place on a wire cooling rack.  Pour the lemon syrup over the hot cake and leave to cool.

Makes 8 slices (or 16 fairy cakes).  One slice is 4 points (260 calories) or one fairy cake is 2 points (130 calories).

  2. I made the cup cakes of these tonight too. Need to leave more space to drizzle the sauce over but otherwise they turned out v v good. Thanks for the culinary tips!!

  4. [...] Thanks to the constant sniffles and tiredness I wasn’t really in the mood to eat anything a lot of the time let alone eat healthy things. When I fancied a bit of something (usually chocolate!) I just had it. Moral of the story there I guess is to make sure that chocolate/snacks in the house for Mr H and the girlchild are ones I don’t like! I’m quite glad in a way that the girlchild isn’t well enough for school and the boychild is still very snotty so I can completely justify staying at home and not heading out to my Slimming World weigh in! Hopefully as we get better through this week my eating will get a bit more under control (though that may not be helped by the lovely Suburban Mum posting a rather yummy looking cake recipe!). [...]
